I have a LOT of mail, in fact it takes up more space than my website does! LOL.
Most of it is from when my husband was deployed and it was practically the only way we communicated....for some reason I'm a little partial to those emails and I'm not ready to delete them all. LOL.
What can I do with them to reduce the space they're taking up?

Have you downloaded them to your computer?

No, I don't think so. They're all on MS Outlook though. When I download them I can just stuff them in a folder and they'll still be readable right?

Yes, if they are in your email box, then they will stay there unless you delete them. You can move them between inbox folders as much as you'd like and they will be fine. Just make sure to backup your computer occasionally.
I do suggest configuring outlook to remove the emails from the server once they are downloaded so that it doesn't take up room in your hosting account. Of course, you'll need to go in there to manually delete the ones that you've already downloaded.
